Peppermint and a Nobel Prize: why cooling creams feel cool

In 2021, the Nobel Prize in Physiology or Medicine went to two scientists, David Julius and Ardem Patapoutian, for answering a question so basic most of us never thought to ask it: how does your body actually feel temperature and touch? Their work mapped the tiny sensors, embedded in nerve endings throughout your skin, that fire when things get hot, cold or pressed. And buried in that prize-winning science is the explanation for something you have felt your whole life: why mint feels cold.

One of the sensors the field mapped is a receptor called TRPM8. Its day job is detecting genuine cold, firing when the temperature at your skin drops and telling your brain so. But TRPM8 has a quirk: menthol, the aromatic compound at the heart of peppermint oil, switches it on chemically. No temperature change required. The receptor fires, the signal travels, and your brain registers cool, even though a thermometer on the spot would not move.

In other words, the coolness of mint is not a flavour, a scent effect or your imagination. It is your own cold-sensing hardware being played, precisely, by a plant. Chilli performs the mirror-image trick: its capsaicin switches on the heat receptor, which is why a curry can make you sweat in winter. Two plants, two receptors, and between them a fair share of the sensory drama in your kitchen.

Once you know this, the presence of peppermint oil in muscle and joint creams stops looking like perfumery. A cream that carries menthol to the skin is speaking directly to the nerve endings there, in a language they were built to understand, and the cooling wash that follows is those sensors doing exactly what they evolved to do. The sensation is genuine, measurable and, thanks to Stockholm, very well documented.
